Comment: Home Fries go with a number of breakfast meals and are tasty, filling and easy to make. Potatoes should be a standard stock kitchen pantry item and it’s your choice of which type to use. (If you have leftover baked potatoes wrap them in foil, refrigerate and use them the next day.) Cut into cubes and pick up the prep directions below.

Ingredients:
1 medium potato (per person)
2 tbls vegetable oil or bacon fat
Sprinkle of Paprika
Salt & pepper to taste
Sprinkle of garlic powder
Preparation:
Peel the potato(s) and cut into ½ slices (lengthwise) and then cut those slices across to make cubes at whatever size you want. Take a 1.5qt pan, fill it half full with water, add the potatoes and a bit of salt and bring to a boil under medium heat. When boiling, test the tenderness of the potatoes and stop when they are cooked through but not pulpy or soft. Strain the potatoes drawing cold water over them (this stops internal cooking) and slide them into an 8” fry pan with preheated oil or bacon fat. Fry the potatoes, turning occasionally browning all sides, sprinkle with salt & pepper, paprika and garlic powder.
