GF Breakfast Burrito

Comment: A family member pulled in at breakfast time after a long night and asked for a Texas Burrito – like the ones his friend’s father makes and he’s from Texas. OK, let’s see what this is all about and sure enough, what we came up with “was close” but not exactly the same so we pass it along for you to modify to your own liking and call it whatever comes to mind. But they’re good as is.
Cooking time:
5 minutes to cook chopped beef (or chicken)

Ingredients:
6 corn Tortillas
¾ pound ground beef
1 cup shredded cheese
1 cup Southwest Salsa (medium or hot depending on taste)
2 eggs, scrambled
Preparation:
  1. Cook chopped beef, drain of any fat, transfer to a bowl or plate.
  2. Splash each tortilla with water and micro for 10 seconds to soften for easy folding.
  3. Spread other ingredients on bowls or plates.
  4. Layer tortillas with ingredients.

Condiments: Sour Cream, Hot Sauce
