Comment: This recipe is popular throughout the year. It’s quick and easy to prepare, it’s healthy, colorful and quite filling and versatile enough to serve as a meal, snack or Side. If Vegetable spirals are not easily available, substitute with penne pasta.
2 8-oz cups (dry) multicolored (or plain) Vegetable Spirals
1-1/2 cups Cottage Cheese
Salt to taste
- In a 3 qt pan w/cover bring 2 qts cold water to a boil.
- Add Spirals, cover, cook until tender.
- Remove, rinse, divide pasta on to 2 bowls/plates, scoop ½ Cottage Cheese into the middle of the pasta and serve.
