Comment: Homefries go with a number of breakfast meals and are tasty, filling and easy to make. Potatoes should be a standard stock kitchen pantry item and it’s your choice of which type to use. (If you have leftover baked potatoes from the night before wrap them in foil, refrigerate and use them the next day. Cut into cubes and pick up the prep directions below.)
Cooking time:
About 20-30 minutes from boiled to pan fried
Yield:
Enough for one person

Ingredients:
1 medium potato (per person)
2 tbls vegetable oil or bacon fat
Sprinkle of Paprika
Salt & pepper to taste
Sprinkle of garlic powder
Preparation:
Peel the potato(s) and cut into ½ slices (lengthwise) and then cut those slices across to make cubes at whatever size you want. Take a 1.5qt pan, fill it half full with water, add the potatoes and a bit of salt and bring to a boil under medium heat. When boiling, test the tenderness of the potatoes and stop when they are cooked through but not pulpy or soft. Strain the potatoes drawing cold water over them (this stops internal cooking) and slide them into an 8” fry pan with preheated oil or bacon fat. Fry the potatoes, turning occasionally browning all sides, sprinkle with salt & pepper, paprika and garlic powder. From boiled to fried should take about 10 minutes over low/medium heat.

Comment: There are numerous types of bacon sold in the markets including Thick Cut, Thin Cut, Smoked, Gourmet, Nitrate-Free, Canadian, Honey and Hickory flavored, etc., and we probably buy a different one each time. Bacon can be expensive so we look for the sales and use it not only for breakfast meals but also for BLT sandwiches, in some sauce recipes and on the top of our meat loaf (when the bacon is cooked the meat loaf is done).
Cooking time:
Bacon is pork so it should be thoroughly cooked and how long it takes depends on the heat you are using but on average, 5 minutes
Yield:
2 slices per person

Preparation Tip:
Take a package of bacon and cut it in half and from one half, take 4 ½ pieces per person. Drop these into an 8”or 10” fry pan and cook over medium heat and cook until crispy.  When cooked, lay it out on a paper towel to absorb the grease before serving. Store the remaining raw bacon in a self-sealing plastic bag and refrigerate.


GF HomeStyle Breakfast Sides: Link Sausages

Comment: Sausages go great with a variety of breakfast meals and we use Johnsonville Original Breakfast Links which are very good.
Cooking time:
10-20 minutes
Yield:
4 per person
Ingredients:
Fresh or Frozen Link Sausages

Preparation Tip:
Note: Cooking, prep and time as recommended by Johnsonville:
Thaw product thoroughly prior to cooking. Sausage is cooked thoroughly when internal temperature reads 180 degrees F, 10-13 minutes.
Skillet:
Place links is a skillet. Cook over medium-low heat; cook 10-13 minutes. Turn often with tongs to brown evenly.
Oven:
Place sausages on a jelly-roll pan.  Bake at 375 degrees F for 18-20 minutes, turning sausages halfway through.
Microwave Reheating
Heat links approximately 1 minute on high or until warmed to your satisfaction (adjust time according to your microwave)
Pan Reheating:
Medium temperature in a covered pan for 8-10 minutes.


GF HomeStyle Breakfast Sides: Corned Beef Hash

Comment: You can make your own corned beef hash using butter, cooked corn beef, chopped potatoes, onions, spices and a gravy OR you can buy a can of Hormel Corn Beef Hash and enjoy an excellent tasting hash made of meat, potatoes and seasonings. We opt for Hormel.
Heating time:
10 minutes
Yield:
1 can serves 4 people
Ingredients:
1 can Hormel Corned Beef Hash
1 tbl vegetable oil

Preparation:

  1. Heat an 8” fry pan with oil and scoop out of the can as much as you want and drop it in the fry pan over medium heat.
  2. Use a fork to flatten out the chunks of hash and stir/flip occasionally as it cooks until crispy. If you have leftover hash in the can, transfer it to a plastic container with cover and refrigerate and use it up within a week to 10 days.
